[Primary Function]
Develop, train, and reassess plant's HACCP, SSOP, and GMP Programs. Assist QA Supervisors. Assist QA Manager on special
Projects.
[Responsibilities and Tasks]
HACCP:
- Develop, reassess, administer, and manage HACCP, SSOP and microbial monitoring plans.
- Initiate and coordinate HACCP validation exercises
- Data trend analysis using statistical tools
- Self-assessments of HACCP plan compliance (EIAO Food Safety Assessment checklists, Regulatory Compliance Self-audit)
- Assist QA Manager with federal inspections and other audits
- Train plant personnel on requirements of HACCP and related programs (GMP & SSOP). Training is performed at initiation of HACCP Program and throughout year
- Monitor HACCP and SSOP programs on daily to include data collection, coordination, and distribution
- Plan, organize, direct, assign, delegate, motivate, and review activities of Q.A. technicians
- Review HACCP paperwork to ensure it is complete/accurate and meets regulatory requirements
- Liaison between USDA and plant to reduce Noncompliance Record (NR) numbers. Provide written responses to USDA noncompliance records. Track and perform NR trend analysis
- Educate staff on noncompliance
- Review and monitor deviations to aid in training and prevention strategies
- Manage and ensure proper documentation for Master Cleaning Schedule and other sanitation programs
- Manage pest control and document areas of concern detected monthly
- Ensure food safety and quality products
- Complete weekly summary of departmental activities
- Respond to issues in timely manner
- Other duties as assigned by QA Manager
- QUALITY ASSURANCE:
- Understand all QA functions: adherence to product specifications, GMPs, HACCP requirements, completion and accuracy of QA records, SSOP documentation as well as other nonspecifically required documentation.
- Perform and monitor daily and weekly reports and checks as required
- Manage QA technicians’ performance, safety, work schedule and other duties
- Perform Product Review and associated paperwork
SPECIAL PROJECTS:
Projects requested or assignments by Plant and QA Managers. These may include but not limited to updating Recall Program, SPC Training, etc.
SUPERVISORY RESPONSIBILITIES:
- 0 to 20 hourly Q.A. Technicians in department.
[Minimum Skill Levels and Work Experience]
- BS or equivalent technical experience.
- Technical knowledge of poultry industry or related field preferred.
- Excellent communication skills -- verbal and written and ability to do so at all different levels of organization.
- Excellent leadership and interpersonal skills and ability.
- Analytical abilities.
- Computer skills, with knowledge of Word, Excel, and Powerpoint.
- Knowledge of HACCP and USDA-FSIS regulations as it pertains to fully cooked products
- Training experience in both small and large group sessions.
- Spanish is a major plus.
